The Bikini Cocktail
Serves 10 people
Ingredients for the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Put all the components into a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Then, turn off the heat and leave to cool down entirely. Pour into a clean bottle, seal and refrigerate it in the fridge, where it will keep for around four weeks.
For the Cocktail Base: Pour the specified spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then filter it preferably using cheesecloth, to ensure it's perfectly clear.
To serve: Add 85ml of the batch mix into a cocktail shaker containing ice, and stir carefully for about 60 seconds to cool it down. Strain into a chilled martini glass or a similar vessel, decorate with the cranberries and complete it by giving it a quick spritz with the mandarin essence above the glass.
